When I was studying abroad in America, I didn’t get into a formal dorm where you have access to the food court on campus. Instead, I decided to get an apartment and cook myself to stay away from the ridiculously expensive food court.

I already was not bad at cooking and I enjoyed it very much helping out my mom and learning from her. However, it's bizarre and eye-opening in a good way of how people learn and grow so much when yourself is all you got and you have to be independent. With that, I got so much better at cooking and even found my own recipe which is weird but fun.

I would like to share some recipes I would like for others to try, so stay tuned! Also, I am Japanese, so there would be a Japanese twist in some of the dishes just so you know.

Risotto using……

This time I am sharing this Risotto recipe that I figured out by accident.

My friend gave me this “oyster sauce” and because I couldn't afford to buy a lot of ingredients like sauces and seasonings, I tried using this oyster sauce for everything I thought would go together with the dish, and this Risotto is one of the dishes.

Now, I would like to inform you that I do not measure at all when I cook so sadly I cannot give you the exact amount, but always start off less when you put seasoning because you can always add-in.

This is just my way of making this and it is nowhere near authentic so please keep that in mind.

The actual recipe

Ingredients

veggies: I usually put in onions and mushrooms, but anything you like.

rice: cold rice preferred.

cheese: as many as you like. I love to put a lot…obviously. mozzarella, cheddar cheese, and any cheese you like.

milk: I like mine thick so I choose milk, but it could be water.

vegitable oil

salt and pepper

cut ham, cut sausage, or any protein of your choice

Oyster sauce

・parsley or topping for visual presentation. Not necessary.

Instructions

  1. Cook the vegetables of your choice with vegetable oil and a pinch of salt until they are soft and cooked.
  2. Throw in your ham or sausages and stir them with the veggies.
  3. Put in your cold rice and separate the rice.
  4. Once separated, pour in your milk or water until the rice is covered and let it sit in low to medium heat. Be careful not to set it into high heat because the milk will boil up and pour out of the bowl.
  5. Put in the oyster sauce a little bit at of time once you find the taste you like. The hams and sausages will give a lot of flavors already, so make sure not to be overboard with the sauce.
  6. Turn off the heat, put all the cheese you want, and stir them until they are melted.
  7. Serve them in a bowl, top it off with a little bit of pepper, some parsley for color if you would like, and you are all set!
